2021 Notorious is an elegant red blend of 75% Cabernet Sauvignon and 25% Merlot that is big and bold. Aromas jump out of the glass with notes of cherry, plum, vanilla, clove, and earth. The mouth feel is full-bodied with round tannins, that lead to a long finish of chocolate and berry notes. This wine should pair nicely with a lightly grilled ahi tuna filet enjoyed with steamed green beans and potatoes. Grilled flat-iron steak accompanied by a chimichurri sauce would also be delicious with the 2021 Notorious.
