Name Origin – Cabbera - When one of our favorite club members and friends – Julie Frank (aka: Jul) was helping us perfect this yummy blend, she suggested the natural mash-up of the two grapes that make up this beautiful wine..."Cab" for the Cabernet Sauvignon - and "bera" for the Italian varietal Barbera.  Welcome back to our second vintage of CABBERA!

When you’re a small craft winery like Adrice Wines, it’s surprising to see how weather, micro-climates, and soils from different vineyards affect wine blends year-over-year.  Our first vintage of Cabbera was almost flipped in its blend percentages (the 2018 vintage being 2/3 Barbera and 1/3 Cab Sauv.).  But what made this 2020 Cabbera brilliant, was to flip the blend percentages and make it Cab Sauv. predominant, with a healthy dash of Barbera.

Imagine a fruit-packed sandwich with Cab Sauv. serving as the starting and finishing bread slices.  The top slice of Cab Sauv. greets you with lovely floral/violet scents, along with a bit of spiciness like anise and fresh fennel.  Then the “guts of the sandwich – the Barbera” (all the yummy stuff you put in the middle that far-outweighs the bread) launches into your palate with tart sour cherry and barrel qualities of cedar, oak, and chocolate that stick to the roof of your mouth.  As you finish your swallow, that bottom slice of Cab Sauv. comes back with lush, dark fruits of boysenberry and blackberry.  Cabbera reminds you of your favorite Cab…only better…with that tart, fruity, higher-acid Barbera blended in.

This lush beauty pairs well with a simple cheese plate (Camembert, Cheddar, Smoked Gouda, Colby, or Muenster).  Or for a main dish, consider rich, dense beef, lamb or venison dishes.  And you’ll be pleasantly surprised with what Cabbera does with a little salt (even potato chips!).  Pair Cabbera with Saltimbocca at your favorite Italian restaurant for a meal to remember.
