Wow…like Pam's two earlier Merlots - our 2017 Étouffant is a gorgeous stunner - complex as complex can be - both on the nose and on the palate. Upon swirling, your nose is welcomed with a beautiful red-fruit-to-black-fruit gush of aromas with baking spices and a slight waft of coffee & cream. On the palate, experience smooth tannins with young plum in the front palate, and a bomb of black cherry and fig on the mid.
This unfiltered stunner will truly bless you if you demonstrate patience. Give the bottle a little breathing time...it truly changes from minute to minute. This wine is one of those rare beauties that you could enjoy one beautiful glass over four days...and the wine would be absolutely amazing - and absolutely different - every single day. I don't know how she does it - but winemaker Pam has made an absolutely SULTRY STUNNER in this 2017 Merlot!
A variety of foods pairs well with Merlot. Because Merlot is medium-bodied, it pairs easily with medium-weight foods: Veal, meatloaf, Italian-style sausages, lamb or beef stews, roast lamb, duck with fruit sauce, fish like salmon and tuna, and dishes with mushrooms and berries are good matches. For braised meat pairings, try complementing Merlot’s boisterous fruit notes with chimichurri sauce.
